How to cook

• Soak overnight in cold water to reduce cooking time (optional for fast-cook varieties).
• Pick over for stones, rinse thoroughly, then boil in fresh water for 45-75 minutes until tender.

• For moi moi, blend soaked peeled beans with pepper, onion, crayfish and palm oil, steam in ramekins or leaves.
